
If you’re looking for a inexpensive light meal that’s perfect for spring, by-golly I think you’ve found it.
This is one of our family favorites brought to us by MiMi, Ben’s mom with a Sandhill Sis twist. Here’s what you need.
1 Can Salmon (Leftover Poached or Grilled Salmon works too.)
Handful Saltine Cracker Crumbs
1 egg
Old Bay Seasoning
Parsley (I used homegrown and dried feel free to use fresh)
Juice from 1 lemon or lime or lemon juice from a jar.
Put ingredients into a bowl and mix together with your hands. Oh come on, live a little it’ll be fun. Shape into patties and put in heavy, hot pan with a small amount of olive oil over medium heat. Turn when brown on first side. This makes four patties. Yes, I can count, there is three in the picture…W was gone that day.
I always serve this up with some Possum. Possum is Barney’s word for pasta tossed in an olive oil, red wine vinaigrette with herbs. Italian dressing works too. Peas or other steamed veggies, a leaf salad, or citrus fruit salad are awesome sides too.
This meal is around $1.00 per plate full. How’s that for economics?

I love cooking and I love salmon! But my fiance complains that I always make the same things over and over. I will def try this recipe.
Oh my goodness..we had tuna patties last night. Growing up mom made them with tuna instead of salmon. Ken’s mom made salmon though. Our family has renamed them ‘crabby patties’, yes after spongebob. One of our favs!
