I love chili. It’s one of my favorite foods.
I’ve always dreamed of being a missionary in Mexico. In my dream I would live in an old adobe house without running water or electricity. My bi-lingual children would play in our yard with our chickens, while I cooked chili out of some leftover beans and hung red chilies in my kitchen window.
It ain’t gonna happen, folks. The only part of that dream that is coming true is the chili.
Here’s what you need to make your chili dreams come true.
1 pound hamburger
1/2 onion diced
2 cloves garlic diced
1/2 green/red/yellow/ bell pepper finely diced (I use green chilies)
1 can kidney beans drained and rinsed
2 cups of leftover pinto beans or 1 can chili beans
1 can of tomatoes diced
1 cup tomatoe juice or puree
1 Tablespoon Cumin
2 Tablespoons Chili Powder
1 beef bullion cube
salt and pepper to taste
Brown hamburger, add onion, garlic, peppers and cook until veggies are soft. Add everthing else, and let simmer for at least an hour. Serve with saltine crackers, pickeled jalapenoes, and cheese. Or serve over rice, baked potato, or hot dog.
Oh Rhoda, it’s as close as you’ll get to Mexico.
