It’s lonely around here. Quiet. Picked-up. Almost clean. If the boys were here, I would think life was good. But today, it makes me sad.
The boys are visiting their MiMi and PaPa this week in a Kansas town far far away. It’s almost more than I can bear. This hen needs her chicks in the nest at night. So in thinking about them, I think I’ll make these yummy waffles, it’s one of their favorites.

I got this recipe from some good people I was a nanny for in Alexandria, Virginia. (That’s just outside of Washington D.C. for you folks that aren’t familiar with the geography around our nations capital.) Fresh off the ranch I cried everyday for the first six months I was there. Life was so different from the midwest and fixing these wholesome waffles were the morning soul food I needed to survive life in a new place.
So are you Rhoda’s ready? Here we go.
Baking Powder Waffles
Sift in to mixing bowl…
1 1/4 Cups Whole Wheat Flour
1/2 Cup Powdered Milk
1 Teaspoon Salt
3 Teaspoons Baking Powder
Add these and stir well…
2 Cups Sweet, Sour, or Butter Milk (Heck, use yogurt if you want.)
2 Tablespoons Honey, Molasses or Sugar (Or a combo like I do)
2/3 Cup of Oil
1 Cup Wheat Germ
3 Egg Yolks
Beat stiff three egg whites and carefully fold into the batter. Bake on a hot waffle iron, put twice as much butter as you should and drown in maple syrup. Inhale with sausage. They’re slap yer mama good, Rhoda.
Funny memory…This tired nanny got up one morning with instructions to make this for the kids. I just knew they were going to pull out a high dollar Micky Mouse waffle iron. Instead Lynn pulled out a waffle iron from the 1950′s (thirty years old at the time.)
She said, “Isn’t this great? I paid fifty cents for it at a garage sale. It had never been used and it works great. I’ve had it for years.”
I didn’t know it then. But, it’s reasoning like this (when it comes to money or life) that makes people rich. I learned a lot of good lessons from that special family.
Anyway. I’m feeling more than a little sentimental today. I miss our boys and sharing a plate of these waffles with you, my friends, will make me feel better. Is there a food in your life that does that?

Can you use regular flour?
Hey Bobbi–of course–it’s my recipe, change it however you like. I’ve used white flour in a pinch and it works fine. It will change the texture from heavy to a little lighter.

OH, man. I know how you feel. It’s the “mommy curse”. I long for a night or two away from my brood, but I know I’d be less than secure not being within their reach. My only hope and prayer is that my kids never, ever miss me as much as I miss them. I’m sure they’re having a great time!
Aunt Sissy–Aw, you know the party continues down there with MiMi & PaPa Swimming, snacking, movies, McDonalds…shopping, spoiling…they are having a great time…probably don’t remember my name. In the mean time Ben and I are having us some quality time.
Quality time? What’s that? It’s been too long for me.

Feelin the mommy blues today also……….kiddos are off to Bible Camp for the week! They are only a hop, skip or a jump from my folks so…………..I’m ok……I think. Now what can I do that is constructive this week???
Connie–it’s great to know I’m not alone. Apron strings are a burger bear. It seems I’ve tied my kids up tightly in mine. My goal is to have them untied by the time they are married.
