My dear Rhodas, if you like a good, moist and chewy chocolate cake with some heavenly old fashion burnt sugar frosting, look no further.

MiMi, Ben’s mom, makes this double delish chocolate cake. The best thing about this is, if you bake at all, you probably have all the stuff you need in your cabinets right now. I love that. Another cool thing about this recipe is, you mix it in the same pan you bake it in. I can hardly wait until you try this.

Here’s what you need.

1 1/2 Cup Flour

1/2 teaspoon Salt

1 teaspoon Baking Soda

3 Tablespoons Cocoa

1 Cup Sugar

1 Tablespoon of Vinegar

1 teaspoon Vanilla

6 Tablespoon Oil or Melted Butter

1 Cup Cold Water

Mix dry ingredients together and put in an 8 or 9 inch pan, level off and make three holes.

In two holes pour 3 tablespoons of oil. In third hole pour 1 tablespoon of vinegar and 1 teaspoon of vanilla.

Pour cold water over top…

…and mix thoroughly.

Level off and bake 35-40 minutes in a 350 degree oven.

Burnt Sugar Frosting

Take 1 cup brown sugar, mix with small amount of milk (I start with 1 tablespoon), and over slow heat bring to a BIG boil. Remove from heat. Add 2 tablespoon butter, 1 teaspoon vanilla, and 1 cup powdered sugar. Beat until cool and frost cake. If your frosting is thick you can add a little milk.

A word to the wise. You can double this recipe and bake it in a 9×13 pan. When you do, be careful not to get interrupted while adding your baking soda. I did that once for Ben’s birthday party. I think I added twice as much as I should have. The cake turned out really pretty…

… but you should have seen the look on our guest’s face when they bit into it. Most of them were not wanting to swallow, and were looking for an inconspicuous place to spit the nasty cake out without me noticing. Then I took a bite and spit it out in my napkin and shouted “Oooooooh, yuck, what’s wrong with it? That tastes nasty!” *spit spit spit* I’m such a great hostess.

We threw all the cake away that day, and three months later it was still intact when I took it to the dump, and looked exactly how it did when we threw it away. The coons that got in the trash wouldn’t even eat it. Sphnicker sphicker sphnicker. Oh, Rhoda, it was bad. The other hundred times I made it, it turned out great.

Simply,
